  • 500g baby carrots
  • 1 tbsp butter

Mix 2 teaspoons Dijon mustard with 1 teaspoon red wine vinegar in a bowl and slowly add 50 ml vegetable oil. Season, then stir in 1/2 small packet of tarragon, chopped, and pour over the cooked and drained carrots while they are still warm.

Mix 50g of softened butter with the zest of one orange and the chopped leaves of 3 sprigs of rosemary. Season well, then shape into a log and wrap tightly in baking paper. Place in the freezer for 15-20 minutes to set or refrigerate until ready to use. Slice and then spread over the cooked and drained carrots, omitting the butter from the recipe above.

Twists: Pickled shallots

Peel 2 banana shallots, cut into rings and place in a small pot. Add 50 ml red wine vinegar and 50 ml water. Cook gently until the shallots are very soft and slightly pink and all the liquid has evaporated, about 30 minutes. Pile the shallots on top of the cooked carrots and season before serving.
