You can cook the ribs on two racks at the same time for 30 minutes in a pressure cooker or in a slow cooker on the short cycle of four hours.

Preparation steps

  1. Preheat the oven to 160°C/140°C fan/gas 3.
  2. Mix sugar, paprika, mustard powder, celery salt and garlic granules in a bowl.
  3. Rub the mixture all over the ribs.
  4. Place the ribs in two large roasting pans with racks in place.
  5. If you don’t have racks, that’s okay.
  6. Pour 150ml of water into the bottom of each can.
  7. Cover the cans tightly with foil.
  8. Roast the ribs for 3 hours until they are almost falling apart.
  9. If the roasting tins are on different shelf levels, swap them halfway through the cooking time.
  10. After cooking, remove the cooking liquid and drain.
  11. For the roast mixture, mix all the ingredients in a pot.
  12. Cook the sauce for 10 minutes, stirring occasionally, until the sugar is dissolved.
  13. Set the roast aside.
  14. Heat an outdoor grill.
  15. Grill the ribs over low heat.
  16. Fry the ribs for 3-4 minutes on each side.
  17. Baste the ribs regularly.
  18. Cook until ribs are golden brown and sticky.
  19. Alternatively, preheat the oven to 220°C/200°C fan/gas 7.
  20. Roast the ribs for 25-30 minutes.
  21. Flip the ribs over and rotate the molds halfway through cooking time.
