Baba Ganoush & Sesame Crackers

  • 4 eggplants
  • 1 garlic clove, crushed
  • 1 lemon, juiced
  • 2 tbsp mint leaves
  • 1 tsp ground coriander
  • ½ tsp cumin seeds
  • 1 tbsp extra virgin olive oil
  • 2 tbsp Greek yogurt
  • 2 tsp Turkish chili flakes or 1 tsp chili flakes
  • 6 large flatbreads
  • 3 tbsp extra virgin olive oil
  • 2 tbsp dukkah spice mix
  • 1 tbsp sumac
  • 1 tbsp black sesame

Preparation steps

  1. Prick the aubergines all over with a fork to brown them.
  2. Grill the eggplants on high or under the broiler until charred, turning halfway through.
  3. Remove the eggplants from the heat and place them in a colander for 10 minutes to drain excess water.
  4. Preheat the oven to 220°C/200°C fan/gas 7.
  5. Cut the seam of the pittas with scissors and carefully separate the two pieces. Cut them into triangles.
  6. Spread the pita triangles on one large baking sheet or two smaller baking sheets.
  7. Drizzle oil over the pita triangles and sprinkle with salt, spices and seeds.
  8. Bake the pita triangles for 10-12 minutes or until golden brown, switching sheets halfway through.
  9. Remove the pita triangles from the oven and let them cool. They will last up to two days in an airtight container.
  10. Place the eggplant flesh in a food processor or blender along with two to three pieces of the charred skin.
  11. Add garlic, lemon, mint, coriander, cumin, oil, yogurt and spices to the eggplant.
  12. Mix the ingredients until smooth and scrape the mixture into a serving bowl.
  13. Cover the pan and place it in the refrigerator. It has a shelf life of two days.
  14. Just before serving, sprinkle the baba ganoush with chili flakes.
