  • 4 tbsp extra virgin olive oil
  • 1 segmented orange, plus the leftover juice
  • Juice 1 lemon
  • 1 fennel bulb, cleaned, halved and finely chopped
  • 1 avocado, quartered, peeled and sliced
  • 200 g cooked king prawns
  • 3 spring onions, sliced
  • 55g bag of wild arugula

Finely dice an avocado and stir it through a pan
Purchased tomato salsa, with some finely chopped
fresh coriander if you like.

Preparation steps

  1. Make the dressing by combining the oil and citrus juices in a small bowl with a little salt and pepper, then set aside.
  2. Place all other ingredients except the arugula in a bowl along with the orange pieces and half of the dressing.
  3. Divide the arugula leaves into 4 martini glasses or bowls.
  4. Pile the salad in the middle of the glasses or bowls.
  5. Drizzle with the remaining dressing just before serving.
