- 4 romaine lettuce leaves, chopped
- 6 cherry tomatoes, halved
- 2 radishes, finely chopped
- 2 spring onions, finely chopped
- 50g cucumber, cut into small cubes
- 25 g flat-leaf parsley leaves, chopped
- 25g mint leaves, coarsely chopped
- 1 avocado, cut into rough pieces
- ½ tbsp sumac (a crushed red, lemony berry; available in Middle Eastern and Indian markets and online)
- ½ garlic clove, crushed
- 1 tbsp lemon juice
- 2 tbsp olive oil
Za’atar spice mix
Grind 50 g of roasted sesame seeds in food
Shred or crush with a mortar and pestle.
2 tbsp dried thyme leaves, 2 tbsp dried oregano leaves, 2 tbsp
Sumac and 1 tbsp cumin with 1 tbsp salt
and a pinch of paprika. Store in an airtight jar and sprinkle over fish, meat or halloumi before grilling.Crunchy za’atar bread
Divide 2 pittas in the middle
in 4 rounds. Brush everything with 1 tablespoon of olive oil
and sprinkle with 2 tablespoons of za’atar spice mix (see recipe above). Place underneath
