Ingredients

  • 6 tbsp mascarpone
  • 40g (or vegetarian alternative), grated Parmesan, plus additional shavings for serving
  • 3 tbsp finely chopped basil
  • Zest of half a lemon
  • 375g pack of ready-rolled puff pastry, quartered (then cut to the length of the asparagus)
  • 350g asparagus spears
  • 1 tbsp olive oil
  • A good handful of pretty salad leaves such as arugula, basil, frisée and small red chard, mixed with vinaigrette

Preparation steps

  1. Preheat the oven to 200°C/fan 180°C/gas 6.
  2. In a bowl, mix mascarpone with parmesan, basil and lemon zest. Season the mixture.
  3. Place the dough on two baking sheets and score the edges of each piece to create a thin border.
  4. Spread the mascarpone and parmesan mixture inside the edges of each piece of dough.
  5. Toss the asparagus in oil, making sure it is evenly coated.
  6. Arrange the asparagus bundles on the dough, stacking them slightly for height.
  7. Bake in the preheated oven for 20-25 minutes or until golden brown.
  8. After baking, take the pastries out of the oven and let them cool slightly.
  9. Cover the warm pastry with dressed lettuce leaves and a few grated Parmesan shavings.
