Ingredients
- 500g large red potatoes, cut into 2½cm pieces
- 4 tbsp butter
- 4 tablespoons of milk
- 2 tbsp chopped flat-leaf parsley
- 400g canned artichoke hearts, drained and sliced
- 1 tbsp olive oil
- 2 garlic cloves, crushed
Preparation steps
- Place the potatoes in a large pot and cover with cold salted water.
- Bring to a boil and cook for 15 minutes or until tender, then drain.
- Return to the pan and add butter, milk and some seasoning.
- Puree until light and fluffy.
- Stir in parsley.
- While the potatoes are cooking, pat the artichoke slices dry with paper towels.
- Heat the olive oil in a medium frying pan.
- Cook the garlic for 1 minute and then add the artichoke hearts and some seasoning.
- Cook for 5 minutes until golden brown and crispy.
- Mash the cooked artichokes into the potatoes and reserve a few for the top.
- Reheat over low heat until piping hot.
- Serve with the remaining artichokes.
