Artichoke, garlic and potato mash

Ingredients

  • 500g large red potatoes, cut into 2½cm pieces
  • 4 tbsp butter
  • 4 tablespoons of milk
  • 2 tbsp chopped flat-leaf parsley
  • 400g canned artichoke hearts, drained and sliced
  • 1 tbsp olive oil
  • 2 garlic cloves, crushed

Preparation steps

  1. Place the potatoes in a large pot and cover with cold salted water.
  2. Bring to a boil and cook for 15 minutes or until tender, then drain.
  3. Return to the pan and add butter, milk and some seasoning.
  4. Puree until light and fluffy.
  5. Stir in parsley.
  6. While the potatoes are cooking, pat the artichoke slices dry with paper towels.
  7. Heat the olive oil in a medium frying pan.
  8. Cook the garlic for 1 minute and then add the artichoke hearts and some seasoning.
  9. Cook for 5 minutes until golden brown and crispy.
