Ingredients

  • 500g pack of shortcrust pastry (thawed if frozen), or make your own dough with 200g/8oz flour and 100g/4oz butter
  • 2 eggs, plus 1 egg yolk, beaten
  • 1 tbsp sunflower oil
  • 4 slices of bacon back
  • 284ml carton of double cream
  • 2 cloves of garlic, finely chopped
  • small bunch of flat-leaf parsley, chopped
  • 290 g jarred artichokes marinated in oil, drained, rinsed and the large pieces halved
  • 100 g mature cheddar, grated

Preparation steps

  1. Preheat the oven to fan 170°C/fan 190°C/gas 5.
  2. If you’re making your own pastry, do it as usual.
  3. Roll out the dough until it is large enough to fill a deep 9-inch (23 cm) flan pan.
  4. Allow the edges of the dough to extend slightly over the edge of the pan.
  5. Prick the dough base with a fork.
  6. Blind bake for 15 minutes.
  7. Remove from the oven and lift out the paper and beans.
  8. Brush the dough base with a little beaten egg (from the filling).
  9. Put it back in the oven for 5 minutes.
  10. While the dough is baking, heat the oil in a frying pan.
  11. Fry the bacon until it turns slightly golden brown.
  12. Cut or tear the bacon into large pieces.
  13. Beat the cream with the garlic and parsley into the beaten eggs.
  14. Season really well.
  15. Arrange the artichoke pieces and bacon casually in the tart pan.
  16. Sprinkle with the cheese.
  17. Pour egg mixture over top until covered.
  18. Season with black pepper.
  19. Turn the oven down to fan 160°C/bottom heat 180°C/gas 4.
  20. Bake the tart for 20-25 minutes or until golden brown and soft.
  21. Remove and allow to cool slightly before serving.
