Preparation steps

  1. Melt 1 tablespoon butter in a medium skillet.
  2. Place the apricots cut side down.
  3. Lightly fry the apricots for 2-3 minutes.
  4. Flip the apricots over and cook until lightly golden, 1 minute more.
  5. Add caramel to pan.
  6. Melt the caramel until savory.
  7. If the caramel is too thick to cover the fruit, add a splash of water.
  8. Keep caramel apricots warm.
  9. Mix the vanilla pudding with 4 tablespoons of water to loosen it.
  10. Dip the bread slices into the custard mixture and toss until thoroughly coated.
  11. Melt half of the remaining butter in a large non-stick frying pan.
  12. Lightly shake off excess pudding mixture from half of the bread slices.
  13. Fry the breaded bread in the butter for 2 minutes on each side until golden brown.
  14. Repeat the frying process with the remaining butter and remaining bread slices.
  15. Serve the French toast hot with the caramel apricots.
