  • 50g powdered sugar
  • 7 g bag of rapid yeast
  • 2 tsp salt
  • 100 ml milk
  • 4 eggs
  • 175g butter, softened
  • 140g dried apricots, diced

  5. Grease 2 x 500g lunch boxes.
  6. Divide the dough into about 16 pieces and stick a few apricots into each piece.
  7. Seal them and form them into small balls.
  8. Place the balls in a can in batches of two until the can is full. No more than 8 pieces should be needed per can.
  9. Let the brioche rise for 3 hours until it has doubled in size.
  10. Preheat the oven to 200°C/fan 180°C/gas 6.
  11. Brush with 1 beaten egg.
  12. Bake for 20 minutes until the loaves are golden brown and sound hollow when tapped on the bottom.
  13. Cool on a wire rack.
