Ingredients

  • 200 g butter, soft
  • 225g golden powdered sugar
  • 225g self-raising flour
  • 1 teaspoon Baking powder
  • 3 eggs, beaten
  • 2 Table spoons of milk
  • 150 g vanilla yoghurt
  • 300g apricots, skinned, halved and pitted, or alternatively use a drained 410g can
  • 225 g blueberries in a basket
  • 25g butter
  • 3 heaped tablespoons of flour
  • 3 tbsp demerara sugar
  • 1 tsp ground cinnamon

Preparation steps

  1. Line an oblong baking pan (21 x 30 cm) with baking paper.
  2. Preheat the oven to 180°C/fan 160°C/gas 4.
  3. In a mixing bowl, mix butter, sugar, flour, baking powder, eggs and milk until creamy.
  4. Pour the mixture into the prepared tin and smooth the lid.
  5. Bake in the preheated oven for 25 minutes or until the cake is almost set.
  6. While the cake is baking, prepare the yogurt and fruit.
  7. In a separate bowl, prepare the streusel by rubbing all the ingredients together.
  8. After 25 minutes, take the cake out of the oven.
  9. Quickly spoon the yoghurt over the cake and spread the fruit on top.
  10. Finally add the streusel mixture.
  11. Put the cake back in the oven and bake for another 15-20 minutes, or until a skewer comes out clean.
