  • 2 x 410g cans of apricots, drained
  • 600 g apricot compote from a jar (we used Bonne Maman)
  • 200g plain flour
  • 140g almonds, with shell, chopped
  • 1 tsp ground cinnamon
  • 200 g butter, diced
  • 100g powdered sugar
  • 100g Demerara sugar
  • Vanilla ice cream or crème fraîche to serve

Preparation steps

1. Mix the apricots and compote in a large baking dish or 6-8 individual ramekins.
2. In a separate bowl, mix the flour, nuts and cinnamon well.
3. Rub the butter into the flour mixture until crumbs form.
4. Stir the sugar into the crumb mixture.
5. Sprinkle the crumb mixture evenly over the apricot mixture in the baking dish(es).
6. Optionally, cover the bowl(s) and store in the refrigerator for up to 24 hours.
7. Preheat the oven to 180°C (fan oven 160°C/gas 4).
8. Bake the streusel for 40-45 minutes or until the streusel topping is crispy and golden brown.
9. After baking, remove from the oven and serve with ice cream or crème fraîche.
