Apricot Almond Bakewell

Ingredients

  • 400g sweet shortcrust pastry
  • 140g self-raising flour, plus a little more for dusting
  • 200 g butter, soft
  • 140g ground almonds
  • 140g golden powdered sugar
  • 3 eggs, beaten
  • 1 x 600 ml jar of apricot compote (I used Bonne Maman)
  • 1 tbsp flaked almonds
  • Powdered sugar, Greek yogurt and clear honey for serving
  • 140g Madeira cake

Preparation steps

  1. Roll out the dough with a little flour until it is large enough to line a 20-23cm deep, loose-bottomed tart tin.
  2. Line the mold with the dough, leaving excess dough to remain.
  3. Chill for 30 minutes or freeze.
  4. Preheat the oven to 180°C/fan 160°C/gas 4.
  5. Line the dough with baking paper, fill with baking beans and blind bake for 20 minutes.
  6. Remove the paper and beans, then bake for another 5 minutes, until the dough is a light cookie color.
  7. In the meantime prepare the filling. Beat the Madeira cake in a food processor and then place it in a large bowl.
  8. Add the flour, butter, ground almonds, powdered sugar and eggs to the bowl.
  9. Mix briefly until a smooth mixture forms.
  10. Reduce oven to 160°C/fan 140°C/gas 3.
  11. Pour the compote into the dough pan and spread it so that the bottom is covered.
  12. Pour the almond mixture over the compote and spread carefully to cover it.
  13. Scatter flaked almonds on top.
  14. Bake for 1 hour until golden brown and firm.
  15. Place on a serving plate and serve slightly warm.
  16. Dust with powdered sugar.
  17. Serve with Greek yogurt and a drizzle of honey.
