Apple rhubarb pudding tart

  • 375g pack of dessert pastries
  • 250g rhubarb, cut into small pieces
  • 300g apples, peeled, cored and cut into small pieces
  • 2 tbsp powdered sugar
  • Juice 1 orange
  • 150 ml double cream
  • 150 ml milk
  • 1 vanilla bean, halved
  • 3 eggs
  • 85g powdered sugar
  • Zest of 1 orange

Preparation steps

  1. Preheat the oven to 190°C/170°C fan/gas 5.
  2. Roll out the pastry to the thickness of a £1 coin and use it to line a 23cm tart tin.
  3. Cut a circle of baking paper larger than the tin and place it in the tin with the baking beans on top.
  4. Blind bake for 15 minutes.
  5. Remove the beans and bake for another 10-15 minutes until lightly golden brown.
  6. Remove the tart from the oven and turn the oven down to 160°C/140°C fan/gas 3.
  7. While the tart is in the oven, gently heat the rhubarb, apple, icing sugar and orange juice in a small pan for 10 minutes until the fruit is soft.
  8. Remove from heat and let cool slightly.
  9. In a separate pot, heat the cream, milk and vanilla pod and bring to the boil.
  10. In a separate bowl, whisk together eggs and sugar.
  11. When the cream mixture reaches boiling point, pour it over the eggs, stirring constantly.
  12. Pour the mixture through a sieve into a clean bowl or jug ​​and add the orange zest.
  13. Once the pie crust is ready, spread the fruit on the bottom of the pie crust.
  14. Pour the vanilla pudding over it.
  15. Place the tart in the oven and bake for 30-35 minutes until the cream is set.
  16. Remove from oven and allow to cool completely before slicing.
