Ingredients

  1. Mix the flour, butter and a pinch of sea salt in a food processor until you get a sandy consistency.
  2. Add egg and 1 teaspoon cold water and puree briefly.

  8. Squeeze the dough together and press it down until it stands 2mm above the tin all around, prick the bottom with a fork and chill for 20 minutes.
  9. In a saucepan, heat butter, lemon juice and 15g icing sugar until melted.
  10. Remove from heat, stir in Calvados and set aside.
  11. Preheat the oven with a baking tray in it to 220°C/200°C fan/gas mark 7.
  12. Arrange apple pieces in concentric circles on the cooled base.
  13. Brush the apples with the Calvados mixture and bake for 10 minutes.
  14. Reduce the oven to 200°C/180°C fan/gas 6 and continue cooking for 15-20 minutes.
  15. Mix the whipping cream, egg and the remaining 50 g powdered sugar.
  16. Sprinkle the tart with 1 tablespoon of powdered sugar and pour in the vanilla sauce.
  17. Bake for another 10 minutes until the filling has set.
  18. Remove the tart from the oven and allow it to cool slightly for 1 hour.
  19. Carefully remove the mold or cake ring and serve with crème fraîche.
