Ingredients

  • 350g plain flour
  • 25g butter
  • 50g dark muscovado sugar, plus 1 tbsp extra for the topping
  • 50 g pecans, chopped
  • 2 teaspoons of baking soda
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • 284 ml cup sour cream
  • 1 egg, beaten
  • 3 eating apples (about 140 g/50 g each), peeled and cored
  • 2-3 tbsp milk

Preparation steps

  1. Preheat the oven to 200°C/fan 180°C/gas 6.
  2. Line a muffin tin with muffin cups.
  3. In a small bowl, rub 50 g of flour with the butter with your fingertips to form breadcrumbs.
  4. Mix 1 tablespoon sugar and the chopped pecans and set aside.
  5. In a large bowl, mix the remaining flour, baking powder, baking soda and a pinch of salt.
  6. Stir in sugar and cinnamon and set aside.
  7. Grate two of the apples coarsely.
  8. Mix the grated apples, sour cream, egg and 2 tablespoons milk.
  9. Make a well in the dry ingredients and quickly fold in the wet ingredients.
  10. Add an additional tablespoon of milk if it’s really dry.
  11. Don’t over mix or your muffins will be tough.
  12. Pour the mixture into the muffin cups – they should be about two-thirds full.
  13. Sprinkle over the pecan topping.
  14. Cut the last apple into thin slices.
  15. Insert the slices into the top of the muffins.
  16. Bake for 20 minutes or until the dough is risen and golden brown and a skewer inserted into the center comes out clean.
