Ingredients

  • 1 quantity of dough ingredients (see “Goes well” below)
  • 2 pears
  • 1 English apple
  • 1 tsp lemon juice
  • 1 tsp cinnamon
  • 100g golden powdered sugar
  • Oil, for deep frying
  • Vanilla ice cream for serving

Preparation steps

  1. Separate 2 eggs and set the two whites aside.
  2. Prepare the dough according to the recipe.
  3. Whisk the egg whites in a clean bowl until they hold their shape.
  4. Fold the egg white into the dough.
  5. Peel the pears, core them and cut them into wedges.
  6. Peel the apple, core it and cut it into rings.
  7. To prevent them from browning, toss the pears and apple in a little lemon juice.
  8. Mix cinnamon and sugar and set aside.
  9. Heat the oil in a deep fryer to 180°C or in a wok until a drop of batter sizzles and turns golden brown within 20 seconds.
  10. Dip the fruit into the batter in portions.
  11. Gently fry the fruit in the oil until golden brown and crispy.
  12. Using a slotted spoon, drain the fried fruit on paper towels.
  13. Mix the fried fruits in the cinnamon-sugar mixture.
  14. Serve the apple and pear cakes with vanilla ice cream.
