- 1 avocado
- 200g can sweetcorn, rinsed and drained
- 1-2 onions, finely chopped
- large handful of coriander leaves, chopped
- Bag of lightly salted tortilla chips
- large handful of grated cheddar
- 200 g chopped canned tomatoes

Crush 6 medium tomatoes, then cook 2 ears of corn in boiling water for a few minutes until the kernels turn pale yellow and soft. Remove from the water and let cool. Cut off the seeds with a knife, mix with the tomato and continue with the recipe as above.
Preparation steps
- Score the avocado lengthwise and around the stone, then twist and separate the two halves.
- Scoop out the stone.
- Using a sharp knife, make diagonal cuts along one half.
- Then make the cuts in the other direction so that you end up with a crisscross effect.
- Run a large spoon over the peel, loosening the avocado pieces.
- Do the same with the other half.
- Heat the grill to the highest level.
- Mix the avocado with the corn, tomatoes (also add their juice), onions and chopped coriander.
- Arrange some tortilla chips on a baking sheet.
- Put some salsa on each chip.
- Sprinkle everything with cheese.
- Place under the broiler and cook for 3-5 minutes until the cheese is bubbling and melted.
