    2. Lightly paint both sides of each petal with egg white.
    3. Pour sugar over each petal.
    4. Shake off the excess sugar with tweezers.
    5. Let dry on baking paper for a day.
  • Preheat the oven to 180°C/gas 4/fan 160°C.
  • Grease two round sandwich tins with a diameter of 20 cm and line the bottom with baking paper.

  • Stir in egg yolk.
  • Sift flour and baking powder over the cake mixture.
  • Lightly fold in the flour and baking powder with a large metal spoon.
  • Fold in the almonds and extract.
  • Stop folding when the traces of flour are gone.
  • Whisk the egg whites until they just hold their shape.
  • Carefully fold a third of the egg whites into the cake mix using a whisk.
  • Repeat with another third and then with the final third.
  • Be careful not to overmix the egg whites so that they do not lose their lightness.
  • Lightly fold in the raspberries.
  • Divide the mixture between the prepared pans and flatten with a round-bladed knife.
  • Bake for 30-35 minutes.
  • Let cool in the tin for 5 minutes, then turn out of the tin, peel off the baking paper and let the cakes cool completely.
  • Place a cake on a serving plate or cake stand.
  • Pour the cream onto the cake with a tablespoon.
  • Scatter the raspberries over the cream.
  • Place the other cake on top of the raspberries.
  • Mix the powdered sugar with 1-11/2 tablespoons of cold water until smooth and lightly coat the back of a spoon with it.
  • Drizzle the frosting over the cake.
  • Scatter the rose petals over and around the cake.
  • Dust with powdered sugar and serve.

    Health Benefits of Anniversary Cake

When it comes to celebrating special occasions, a delicious cake is often the centerpiece of the festivities. One such delicious cake that not only pleases the taste buds but also offers some health benefits is the anniversary cake. Packed with a combination of delicious ingredients, this cake is a perfect treat for your taste buds and body. Let’s dive into some of the incredible health benefits this cake has to offer:

    1. Raspberries for an Antioxidant Boost:

The Jubilee Cake contains peeled raspberries, preferably Scottish. These tiny, bright red berries are not only delicious but also rich in antioxidants. Antioxidants help fight free radicals in the body and reduce the risk of chronic diseases such as heart disease and certain cancers. Additionally, raspberries are an excellent source of vitamin C and fiber, which promote a healthy immune system and aid digestion.

    2. Almonds for Heart Health:

Using ground almonds in the anniversary cake provides a wonderfully nutty taste and offers numerous health benefits. Almonds are known for their heart-healthy properties as they are rich in monounsaturated fats, which can help lower bad cholesterol levels. They are also a good source of vitamin E, magnesium and potassium, all of which help maintain a healthy heart and reduce the risk of cardiovascular disease.

    3. Clotted Cream for Bone Health:

Cornish clotted cream, a traditional ingredient in this cake, not only adds a creamy richness but also offers some health benefits. This decadent ingredient is a great source of calcium, essential for maintaining strong and healthy bones. Calcium also plays an important role in muscle function, nerve transmission and blood clotting. Taking clotted cream in moderation can be beneficial for people who want to improve their bone health.

    4. Butter and Eggs for Important Nutrients:

The anniversary cake requires butter and eggs, ingredients rich in essential nutrients. Butter contains vitamins A, E and K2, which are crucial for various body functions including maintaining healthy vision, skin and blood clotting. Eggs, on the other hand, are an excellent source of high-quality protein, essential amino acids, vitamins and minerals. They contribute to muscle building, brain function, and general growth and maintenance of the body.

All in all, while anniversary cake is undoubtedly a tempting treat for special occasions, it also offers some surprising health benefits. From the antioxidant-rich raspberries to the heart-healthy almonds and calcium-rich clotted cream, this cake can be a guilt-free treat for your taste buds and well-being.
