  • 300g plain flour
  • 150g melted butter
  • 50g powdered sugar
  • 175 g pecan halves
  • 4 large eggs
  • 85g golden syrup
  • 1 tsp vanilla essence
  • 2 tbsp bourbon
  • 50g butter, melted
  • 85g light muscovado sugar
  • 150 ml whipped cream
  • 2 tbsp bourbon
  • 2 tbsp golden syrup

Bake in a 23cm tin and bake for 40 minutes.

Preparation steps

  1. Preheat the oven to 190°C/fan 170°C/gas 5.
  2. Mix the flour, butter and sugar well with your hands.
  3. Press the mixture into the bottom and sides of six 10cm fluted tart tins.
  4. Place the tart pans on a baking tray.
  5. Reserve 36 pecan halves and roughly chop the rest.
  6. Mix together eggs, sugar, syrup, vanilla, bourbon, melted butter and chopped pecans.
  7. Pour the filling into the tart cases.
  8. Top each cake with 6 pecan halves.
  9. Bake the tarts for 20-25 minutes until golden brown and firm.
  10. The filling will rise as it bakes but will settle as it cools.
  11. You can make these cakes 2 days in advance and freeze them for up to 2 months.
  12. If you prefer, you can serve the pies warm with iced bourbon cream.
  13. To make the iced bourbon cream, beat heavy cream with golden syrup and bourbon until slightly stiff.
  14. Place the cream in a sturdy container and freeze for up to a month.
  15. Serve the cream straight from the container like ice cream, or let it soften for up to 15 minutes for a softer, creamier version.
