Ingredients

  • 250g raisins

  • 140g plain flour

  • 100g light muscovado sugar

Because this cake keeps well, I always make it at least a day in advance. If you want to reheat the cake before serving, return it to the tin, cover with aluminum foil and place in the oven at 160°C/fan 140°C/gas 3 for about 10-15 minutes.

Preparation steps

  1. Place the raisins in a bowl, pour the sherry over them and then let them soften for at least 30 minutes.
  2. In the meantime, preheat the oven to 180°C/fan 160°C/gas 4.
  3. Lightly grease a 20cm diameter round cake tin and then place a circle of baking paper on the bottom.
  4. Mix yogurt, oil and eggs.
  5. Place the remaining dry ingredients in a large bowl, pour in the yogurt mixture and stir until smooth.
  6. Scoop half of the raisins out of the sherry and stir them into the batter.
  7. Pour the dough into the prepared pan and smooth the surface with a spoon.
  8. Bake in the oven for 50-55 minutes, until the top springs back when lightly pressed and a skewer inserted into the center of the cake comes out clean.
  9. Take a skewer and poke it all over the cake.
  10. Pour 5 tablespoons of the soaked sherry over it and let it take effect.
  11. You can make up to this point 3 days in advance and store in an airtight container.
  12. Serve warm or let cool, then dust with powdered sugar.
  13. Heat the rest of the soaked raisins and the sherry and serve with the cake along with some vanilla ice cream.
