Almond meringue with summer berries

Ingredients

  • 75g whole almonds
  • 5 egg whites (make ice cream from the yolk)
  • 275g powdered sugar
  • Handful of raspberries, room temperature (approx. 200g)
  • 2 x 284ml boxes of double cream
  • approx. 250g strawberries, also at room temperature, peeled
  • Powdered sugar for sifting

Preparation steps

  1. Preheat the oven to 190°C/170°C fan/gas 5.
  2. Scatter the almonds on a baking sheet and roast until golden brown, 6-8 minutes. Grind them very coarsely in a small food processor and then set aside. Lower the oven to 160°C/fan 140°C/gas. 3. Line a baking tray with non-stick baking paper.
  3. In a scrupulously clean mixing bowl, beat the egg whites until stiff peaks form. Add half the sugar and beat again until stiff peaks form again. Using a metal spoon, carefully fold in the remaining sugar, a spoonful at a time, followed by most of the almonds (reserving a small handful). Place the meringue on the baking tray lined with baking paper and spread it roughly into a 20cm circle. Scatter the reserved almonds on top. Bake for 20 minutes, reduce the temperature to 140°C/120°C fan/gas 1 and then bake for a further 40 minutes. Allow the meringue to cool with the door open or on the side of the oven, depending on your preference.
  4. While the meringue is baking and you want to add the glamor of a raspberry curl to the cream, prepare a few spoonfuls of puree by pressing 125g of the raspberries through a sieve.
  5. Just before assembling, whip the cream until soft and cloudy. Lightly spread about half or more of the raspberry puree through the cream. You can serve the rest separately as a side dish. Place the meringue on a nice dish. Pour the whipped cream generously over the meringue. Slice the strawberries randomly. Pile the berries on top of the cream and offer the remaining fruit separately. Sift the powdered sugar over it. Go to the table and bow.
