  • 75g whole almonds
  • 5 egg whites (make ice cream from the yolk)
  • 275g powdered sugar
  • Handful of raspberries, room temperature (approx. 200g)
  • 2 x 284ml boxes of double cream
  • approx. 250g strawberries, also at room temperature, peeled
  • Powdered sugar for sifting

Preparation steps

  1. Preheat the oven to 190°C/170°C fan/gas 5.
  2. Scatter the almonds on a baking sheet and roast until golden brown, 6-8 minutes. Grind them very coarsely in a small food processor and then set aside. Lower the oven to 160°C/fan 140°C/gas. 3. Line a baking tray with non-stick baking paper.
  3. In a scrupulously clean mixing bowl, beat the egg whites until stiff peaks form. Add half the sugar and beat again until stiff peaks form again. Using a metal spoon, carefully fold in the remaining sugar, a spoonful at a time, followed by most of the almonds (reserving a small handful). Place the meringue on the baking tray lined with baking paper and spread it roughly into a 20cm circle. Scatter the reserved almonds on top. Bake for 20 minutes, reduce the temperature to 140°C/120°C fan/gas 1 and then bake for a further 40 minutes. Allow the meringue to cool with the door open or on the side of the oven, depending on your preference.
  4. While the meringue is baking and you want to add the glamor of a raspberry curl to the cream, prepare a few spoonfuls of puree by pressing 125g of the raspberries through a sieve.
  5. Just before assembling, whip the cream until soft and cloudy. Lightly spread about half or more of the raspberry puree through the cream. You can serve the rest separately as a side dish. Place the meringue on a nice dish. Pour the whipped cream generously over the meringue. Slice the strawberries randomly. Pile the berries on top of the cream and offer the remaining fruit separately. Sift the powdered sugar over it. Go to the table and bow.

Health Benefits of Almond Meringue with Summer Berries

Almond meringue with summer berries is not only a delicious dessert, but also a healthy treat. This irresistible combination of whole almonds, egg whites, summer berries and cream offers numerous health benefits. Let’s take a closer look at how these ingredients contribute to our well-being:

1. Whole almonds

Almonds are rich in essential nutrients and offer a variety of health benefits. They are a great source of healthy fats, proteins, fiber and vitamin E, a powerful antioxidant that protects the body from oxidative stress. Eating almonds may contribute to lower cholesterol, lower blood sugar levels, and improved heart health.

2. Egg white

Using egg whites in this recipe not only adds volume and structure to the meringue, but also provides several health benefits. They are low in calories and free of cholesterol and fat, making them an excellent choice for anyone watching their weight or keeping their cholesterol levels under control. In addition, egg whites are an excellent source of high-quality protein that supports muscle repair and growth.

3. Summer berries

Raspberries and strawberries, the star berries of this dessert, are not only delicious but also very nutritious. Berries are generally known for their high levels of antioxidants, fiber, vitamins and minerals. They are particularly rich in vitamin C, which strengthens the immune system and promotes collagen synthesis for healthy skin. The fiber in berries supports digestion and helps maintain a healthy weight.

4. Double cream

Although double cream gives this dessert a luxurious and creamy texture, it should be consumed in moderation due to its high fat content. However, small amounts of high-quality dairy products like double cream can provide important nutrients, including calcium, vitamin D and vitamin K2, which are important for bone health. Additionally, the fat in the cream provides a feeling of satiety and can prevent overeating.

This Almond Meringue with Summer Berries recipe not only satisfies your sweet tooth, but also offers a number of health benefits. From the heart-healthy almonds to the antioxidant-rich berries to the protein-rich egg whites, each ingredient contributes to your overall well-being.
