Ingredients

  • 250 g butter, soft
  • 140g golden icing sugar, plus a little more
  • 1 egg
  • 1 tsp vanilla extract
  • Zest 2 lemons
  • 300g plain flour
  • 100g ground almonds
  • some milk to seal
  • about 3 tablespoons lemon curd
  • Almond flakes for the topping

Preparation steps

  1. Preheat the oven to 190°C/fan 170°C/gas 5.
  2. Mix butter, sugar, egg, vanilla, zest and a pinch of salt in a large bowl until smooth.
  3. Fold in flour and ground almonds.
  4. Form the mixture into 2 rounds and press flat.
  5. Wrap the circles in plastic wrap and let them rest in the refrigerator until firm, about 30 minutes.
  6. Roll out a piece of dough on a floured surface to about 1lb thick.
  7. Cut circles out of the dough using a 7cm cookie cutter.
  8. Brush the circles with milk.
  9. Place 20p drops of lemon curd in the center of half of the circles.
  10. Carefully place the remaining circles on top of the lemon curd.
  11. Use your fingers to gently press the edges to seal.
  12. Sprinkle some powdered sugar and flaked almonds on top.
  13. Bake for 15 minutes until light golden.
  14. Repeat the process with the remaining dough.
  15. Squeeze any leftovers together and roll up again.
  16. You can freeze the cookies before baking, but add up to 5 minutes to the cooking time.
