Ingredients

  • 5-6 lamb legs
  • 3-4 onions, halved and sliced
  • 100g fresh ginger, peeled and roughly chopped
  • 6 cloves of garlic
  • 2 x 400g cans of chopped tomatoes
  • 6 tbsp balti paste
  • 2 tbsp garam masala
  • 4 tsp brown sugar
  • a handful of pomegranate seeds for serving
  • a handful of coriander leaves for serving
  • Yoghurt or raita, Indian chutneys or pickles and rice and naan or chapatis for serving
  • 2 tbsp balti paste (we used pataks)
  • 2 tbsp sunflower or vegetable oil
  • Juice 1 lemon
  • 2 tsp ground cumin
  • 2 tsp brown mustard seeds
  • 2 tsp ground turmeric
  • 2 tsp kalonji seeds (nigella or onions).
  • 1 tsp ground cinnamon

Preparation steps

  1. Mix all the ingredients for the marinade the day before.
  2. Place the lamb legs in a roasting pan and rub them with the marinade. Cover and chill overnight.
  3. Preheat the oven to 220°C/200°C fan/gas 7.
  4. Roast the lamb for 20 minutes until browned, then reduce the oven to 160°C/140°C fan/gas 3.
  5. Cover the dish tightly with a few layers of foil, press the edges together well to prevent steam from escaping, and place in the oven for another 3 hours.
  6. Cover the lamb and increase the temperature in the oven to 180°C/160°C fan/gas mark 4.
  7. Scatter the onions into the juice in the tin and place in the oven uncovered for 30 minutes.
  8. Place ginger, garlic, 1 can chopped tomatoes, balti paste, garam masala and sugar in a blender or food processor.
  9. Stir together until fairly smooth.
  10. When the onions have cooked for 30 minutes, stir the tomato paste into the onions and sow with the second can of tomatoes.
  11. Place back in the oven for the final 30 minutes.
  12. Sprinkle the lamb with pomegranate seeds and coriander.
  13. Serve straight from the can with cooling yoghurt or raita, your favorite Indian pickles and plenty of rice and bread to enhance the delicious Balti sauce.
