- 5-6 lamb legs
- 3-4 onions, halved and sliced
- 100g fresh ginger, peeled and roughly chopped
- 6 cloves of garlic
- 2 x 400g cans of chopped tomatoes
- 6 tbsp balti paste
- 2 tbsp garam masala
- 4 tsp brown sugar
- a handful of pomegranate seeds for serving
- a handful of coriander leaves for serving
- Yoghurt or raita, Indian chutneys or pickles and rice and naan or chapatis for serving
- 2 tbsp balti paste (we used pataks)
- 2 tbsp sunflower or vegetable oil
- Juice 1 lemon
- 2 tsp ground cumin
- 2 tsp brown mustard seeds
- 2 tsp ground turmeric
- 2 tsp kalonji seeds (nigella or onions).
- 1 tsp ground cinnamon
- Mix all the ingredients for the marinade the day before.
- Place the lamb legs in a roasting pan and rub them with the marinade. Cover and chill overnight.
- Preheat the oven to 220°C/200°C fan/gas 7.
- Roast the lamb for 20 minutes until browned, then reduce the oven to 160°C/140°C fan/gas 3.
- Cover the dish tightly with a few layers of foil, press the edges together well to prevent steam from escaping, and place in the oven for another 3 hours.
- Cover the lamb and increase the temperature in the oven to 180°C/160°C fan/gas mark 4.
- Scatter the onions into the juice in the tin and place in the oven uncovered for 30 minutes.
- Place ginger, garlic, 1 can chopped tomatoes, balti paste, garam masala and sugar in a blender or food processor.
- Stir together until fairly smooth.
- When the onions have cooked for 30 minutes, stir the tomato paste into the onions and sow with the second can of tomatoes.
- Place back in the oven for the final 30 minutes.
- Sprinkle the lamb with pomegranate seeds and coriander.
- Serve straight from the can with cooling yoghurt or raita, your favorite Indian pickles and plenty of rice and bread to enhance the delicious Balti sauce.
