  • 300 g dark chocolate (approx. 55% cocoa content)
  • 100g bar of milk chocolate
  • 100g light muscovado sugar
  • 85 g butter, room temperature
  • 100 g peanut butter, preferably crunchy
  • 1 medium egg
  • ½ tsp vanilla extract
  • 100g self-raising flour
  • 100g large salted roasted peanuts

Preparation steps

  1. Preheat the oven to 180°C/gas 4/fan 160°C. Gather all the ingredients and weigh them.
  2. Chop 200g of the dark chocolate into coarse, irregular pieces. Chop the milk chocolate in the same way, but keep it separate.
  3. Break the remaining dark chocolate into a large heatproof mixing bowl. Melt in the microwave on medium heat for about 11½ minutes (or over a pot of simmering water).
  4. Stir the chocolate until melted, then add the sugar, butter, peanut butter, egg and vanilla, beating with a wooden spoon until well combined. Stir in the flour, all the milk chocolate pieces, the nuts (no need to chop) and half of the dark chocolate pieces. The mixture feels quite soft and comes off the spoon easily when shaken.
  5. Place large spoonfuls in 12 stacks on 2 or 3 baking sheets, leaving room for them to spread (you may need to bake in batches). Insert the remaining pieces into the cookies (2-3 pieces each).
  6. Bake for 10-12 minutes until they darken slightly around the edges. The smell tells you they are ready. They are soft in the middle but become crispy as they cool. (Bake the cookies longer and you’ll get crispier cookies.) Let them cool and set on the baking sheet for a few minutes (they’ll break if you move them while they’re still hot), then remove them with a wide spatula to a cooling rack . They will stay crispy for 3-4 days in an airtight container.
