- 250g pack salted butter, softened, plus a little butter for greasing
- 175g mixed nuts, we used Brazil nuts, hazelnuts, pecans and almonds, roughly chopped
- 250g soft light brown sugar
- 3 tbsp golden syrup
- 4 large eggs
- 140g self-raising flour
- 75g ground almonds
- ½ tsp baking powder
- 1 tsp almond extract
- 3 tbsp milk
- 200 ml cream
- 5 tbsp caramel, canned (we used cloves)
- Preheat the oven to 180°C/160°C fan/gas 4.
- Line two 20cm loose-bottomed Victoria sandwich cake tins with baking paper, then grease one of the tins over the parchment (this will prevent the caramel nut topping from sticking when you turn it out).
- Place the nuts in a frying pan and toast over medium heat until golden brown.
- Add 50g butter, 50g sugar, the golden syrup and a good pinch of salt.
- Stir until the butter is melted, then let it bubble for 2 minutes until the butter sauce is golden brown – don’t let it bubble for too long or the topping will harden after it cools.
- Pour into the cake tin with the greased baking paper and smooth it out.
- Allow the cake to cool while you bake it.
- Place the remaining butter and sugar in a large bowl and beat with an electric whisk until light and fluffy.
- Add the eggs one at a time, mixing well between each addition.
- Add flour, almonds, baking powder, 1/2 teaspoon salt, almond extract and milk and stir again until well combined.
- Divide the cake mixture between the tins and smooth it over the surface.
- Bake for 25 minutes or until a skewer comes out clean.
- Allow to cool in the tins for 10 minutes, then turn out onto a wire rack and remove the parchment.
- Allow to cool completely.
- Whisk together cream and 2 tablespoons caramel until soft and just holding its shape.
- To assemble the cake, place the plain cake on a plate or stand.
- Add the whipped cream on top and stir it towards the edges.
- Drizzle the remaining caramel over the top (mix well first to loosen it up) and let it drip down the edges.
- Place the remaining sponge cake dough on top, nut side up.
- Serve within a day or refrigerate for 3 days and remove from refrigerator 10 minutes before serving.
